Emma Dumas’ The Muesli, Pomegranate & Brussels Sprout Salad

This salad is a family favourite at our place. It’s quick and easy to make, absolutely delicious and makes a great treat for lunch the next day.

INGRDIENTS 

  • 500g of Brussels Sprouts (shredded)
  • 1/2 A Pomegranate
  • 5 Tbsp of The Muesli Classic
  • 2 Tbsp of Coconut Oil
  • 2 tbsp of Souk Spice
  • 1/2 a Red Onion
  • 1/2 a cup Parmesan
  • Red wine vinegar
  • 1 Tbsp Olive Oil
  • Dijon mustard
  • Salt & Pepper

METHOD

  1. Liquify coconut oil in the microwave for 20 seconds.
  2. Preheat the oven to 180 degrees celsius. Mix The Muesli Classic with coconut oil and souk spice and spread on a baking tray. Bake for 4-5 minutes.
  3. Shred brussels sprouts with a grater. Finely chop red onion
  4. Combine all the dry ingredients in a bowl. Shake together olive oil, red wine vinegar and dijon mustard. Drizzle dressing over salad. Voila!
