Creamy Coconut PB & J Bowl

Serves 1

Ingredients

For the Raspberry Chia Jam 

  • 1 1/2 cups of frozen raspberries
  • 1 cup of a cup of water (you can use coconut water here)
  • 2 tbsp of chia seeds
For the Porridge
  • 5 dessert spoons of The Muesli Classic 
  • 2 dessert spoons of coconut cream
  • 1 cup sugar-free natural coconut water
  • 1 dessert spoon of natural peanut butter
  • Extra coconut cream and Muesli, to serve.

Method

For the Raspberry Chia Jam 

  1. Place the raspberries and water in a small saucepan and cook until it a lumpy syrup is formed, stirring and lightly mashing as it goes.
  2. Add the chia seeds and turn off the heat. Allow to sit for at least 30 minutes.

For the Porridge 

  1. In a small saucepan, bring the muesli and coconut water to a simmer.
  2. Ad the coconut creamand simmer for a further minute.
  3. Serve
