Makes 6 Bars
Ingredients
The Bars
- 3 Cups of The Muesli Classic
- The rind of two oranges
- The juice of one fresh orange
- 1 1/2 tsp of dried ginger
- 2 tsp of cinnamon
- 2 free range eggs, lightly whisked
- 25g of unsalted butter, melted
The Chocolate Drizzle
- 2 tsp of coconut oil
- 1 tsp of butter
- 1 heaped tbsp of cacao powder
Method
The Bars
- Line a 25x15 (or similar) baking dish with baking paper and pre-heat your oven to 180c.
- In a large bowl, mix The Muesli, orange rind, ginger and cinnamon together.
- In a smaller bowl, combine your melted butter, orange juice and eggs.
- Pour your wet ingredients over your dry Muesli mixture, then combine well.
- Spread into your lined baking dish evenly, using the back of a large spoon to pat down the mixture and level the top.
- Bake at 180c for 20 minutes or until golden and firm.
- Allow to cool completely before cutting into bars.
The Chocolate Drizzle
- Melt your coconut oil and butter together in the microwave (about 30 seconds)
- Add your cacao powder and mix well.
- Drizzle over your completely cooled Muesli bars and allow to cool before serving (speed this up by putting them in the fridge)
I have two early morning starts to my working day so rely on a good quality breakfast bar and a homemade latte while I drive to work. The commercially made bars are very expensive $23 for 6 so I was really keen to find a nutritious, sugar-free and cost-effective alternative. I knew from the advice of my dietician that a 50g serving is perfect and found the recipe makes 10 good sized bars. The only thing I will change is the icing, even this sugar-free girl found it just needs to be a tad sweeter so I will add a teaspoon or two of sugar…
